Frittata
An Italian style omelet that typically has the ingredients mixed in with the eggs before frying. It's much firmer than your standard omelet because it's cooked very slowly over low heat and it has a round shape rather than the typical half moon shape. Usually it's finished under the broiler or flipped to ensure even cooking.

I've been meaning to try this for a while, it actually looks quite nice.

2I like to make fritattas, asparagus & sundried tomatoes...yum!
3Kind of like a Spanish tortilla. I make fritattas up and eat the leftovers for several days as breakfast, lunch or dinner.
4I've only had a frittata once, and I loved it! I've never been so brave to go at it alone. I might try now! Yum, I'm so hungry!
