Was just dicussing this last night with my family. I used to to eat the chicken skin when it was crispy and crunchy, in other words, fried. But now, there's something about eating the skin
that makes my stomach flip and I'm rather disgusted by it. Sad too because I remember how much
I used to like it.
I always have to have at least a taste when I make something like Greek chicken, flavored with lemon juice and oregano and garlic. Still I avoid it as a general rule simply because it's too
fatty.
Even things I am not supposed to eat at all, I always take a taste and then I don't crave it...if I have any will power left:)

I just remembered that the classic way of preparing Peking (Beijing) Duck is that while the duck was carved tableside, only the skin was served with very little meat, if any, attached. I was
introduced to this as a teen in San Francisco...and became enamored with the subtle flavors of this classic dish.
You could have the duck meat, of course, and most people did, but the dish was made so that the delicate flavors of the skin might be savored.
Adore it. That said, I was raised to eat every part of the chicken, every scrap of meat, and even the small bones (e.g. the wings when they're roasted and crispy).
I'm one of those wussy meat eaters. I never eat the skin and the meat always has to be well done. I even tell the servers when I eat out that the cook can burn it a little lol. I don't wanna
think about the skin, because you know what has skin? Something that used to be alive. *sad face* But it tastes so good...

NEVER - I can't even bear to take it off the breast when I prepare it, it makes me gag, literally. Hubby does it for me. I had tried it and I do not like it at all. Aside from that

28I'll only eat skin on rostisado style chicken from Juan Pollo. It's so good, crispy and chewy at the same time, yum!
