Zucchini Cookies

1 cup butter, at room temperature
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup walnuts, chopped
1 cup semisweet chocolate chips
1/2 cup raisins
1 cup sweetened flaked coconut
- Preheat oven to 350°.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs and vanilla. Stir in zucchini.
- In a medium bowl, whisk together flour, baking powder, cinnamon, and salt. Add to zucchini mixture.
- Stir in nuts, chocolate chips, raisins, and coconut.
- Drop by tablespoonfuls onto buttered cookie sheets.
- Bake until lightly browned, 15 to 20 minutes, and transfer to a rack to cool. Repeat with remaining dough.
Makes 5 dozen cookies.

2Guh, surely it would be better for children to learn about the goodness of vegetables without trying to smuggle them into sugar laden foods? If anything, parents might justify giving their kids these cookies on the basis of 'It has vegetables in it!' just like my parents used to justify giving my brother pizza for the same reason.

4I think that if parents introduce vegs. in a good way from the start, kids wouldn't be so apprehensive to try them. If kids see their parents enjoying these foods, it shouldn't be a problem. Yes, everyone has their own tastes, but nobody (kids and adults alike) hates all vegetables.
5My mom makes zucchini bread with raisins and walnuts. It great and I just started eating it last year with cream cheese or butter spread on it. I'm 33. i think it's okay if you have a kid who refuses to eat veggies. My old boss used to puree zucchini and add it to home made chocolate bundt cake. It made the cake so moist. Delish!
6Well, I've got a 4 year old and a 2.5 year old - so, I'm always on the lookout for ways to have them eat healthily. I think these cookies actually sound decent (minus the chocolate chips). But not necessarily as a way to get my kids to eat their veggies. As someone else posted, as long as you introduce it to their palate at a young age, and show that you yourself like to eat them - veggies are pretty much well received by kids. My 4 year old devoured some grilled marinated squash, brown rice, and grilled balsamic glazed chicken tonight. In our case, we never assume our kids won't like something- we let them be the judge. Getting back to these cookies, I think they actually sound kinda tasty and I would consider making them just to see what they taste like.

7I dunno about the cup of butter... 48% of calories come from fat, which is something I would not want to eat, let alone let my child eat. A cookie is still a cookie, even if it has zucchini added to it. Look at the refined flour, sugar, and butter... I concur with the comments above about how we should set an example for our children by enjoying good healthy wholesome food. If my child really wants a cookie, I will just buy one once in a while as a treat.

12I just baked these cookies and they're delicious!!! I decreased the sugar content and chocolates. You really can't even taste the zucchini. Bravo!!
