Rich Fudgy Brownies
From Nicole Rees in Fine Cooking
8 oz (1 cup) unsalted butter plus enough softened unsalted butter to grease the pan
3 oz (2/3 cup) unbleached all-purpose flour plus enough to line the pan
2 cups granulated sugar
4 large room temperature eggs [this seriously makes a difference]
1/2 tsp vanilla extract
2 1/2 oz (3/4 cup) unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp table salt
- Position rack in center of oven and heat to 350F.
- Butter and flour a 9" square pan, tapping out excess flour. [I decided to use cocoa powder instead of flour.]
- Melt butter in medium saucepan over medium heat.
- Remove pan from heat - whisk or stir in sugar, followed by all four eggs and vanilla.
- Stir in flour, cocoa, baking powder and salt. Go slowly to keep the ingredients from flying out of the pan. Stir until smooth and uniform.
- Spread batter into prepared baking pan, smoothing so it fills the pan evenly.
- Bake until a toothpick or skewer comes out clean (there will be a few clumps clinging to it) — this will take about 40 minutes.
- Let brownies cool completely in the pan on a rack.

Hey - btw Yum, have you attempted to make any delish chocolate crossiants yet??? Like the ones they sell at Tartine Bakery?
15I have a really similar recipe and the stovetop method makes them excellent. Mine calls for the dry ingredients to be sifted in and that makes it easy to blend and nothing flies away (I think mine has milk though so you alternate).
Another nice option is to brush the brownies with 1/4 cup of a cream liquor when they're still warm. Bailey's and chocolate, so good...

CS - long time no see! It makes a 9x9 pan, so it depends on how big you cut them. Anywhere between 1 and 16 is where I usually end up

19If you want to take it one step further, make a cocoa/powdered sugar glaze (easy to find) but use Bailey's instead of milk and a little vanilla, drizzle/frost when cool. And brush with Bailey's when warm. They're not too boozy, just really good!

38I made these the other night. They stayed in the oven for abotu 30 minutes before I checked them (my oven runs hot) and I think I would only leave them in for 25 minutes in the future.
I glazed them with Cointreau and the orange bite was really nice with the chocolatey-ness of the brownies.
One word to the wise: make sure the saucepan in which you are melting the butter has time to cool before you add the eggs, otherwise you will end up with little bits of cooked egg whites floating in your mixture!

40I will deffinately be trying this recipie. I use my mums old one and sometimes the brownies taste a bit..eggy.. sor of like metal. I cant explain it. But looking at these made my mouth water!
