My dad's birthday is on Friday, and instead of baking him a cake I'm making a big bowl of rice pudding. He's currently all about foods that remind him of the old days — life before I became a raging foodie maniac — meatloaf, chicken in a bag, hard shelled tacos, etc. That's why I thought a classic dessert would be a lovely treat. A candle will fit nicely on top of a mound of sweet, creamy rice flavored with vanilla, cinnamon, and sugar. Pair all of that with a happy birthday song and I'm sure he'll call it a great birthday. Rice Pudding
From Very Best Baking

1 cup white rice, medium or short grain
1 cinnamon stick, broken into pieces

1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
2 large eggs, slightly beaten
1 pinch ground cinnamon
- Place water, rice and cinnamon stick pieces in small saucepan; bring to a boil. Reduce heat to low; cover. Cook for 12 to 15 minutes or until liquid is absorbed.
- Remove cinnamon stick pieces. Stir in evaporated and sweetened condensed milks, raisins, vanilla extract and salt; bring to a boil.
- Stir a small portion of rice mixture into eggs. Add egg mixture to rice mixture; mix well with wire whisk. Bring to a boil.
- Cook, stirring constantly, for 2 minutes. Serve warm or chilled. Sprinkle with cinnamon before serving.

What a lucky dad you have!
1Yum! What a great alternative to cake! I wonder if this would work in my rice cooker?
2Oh, that's really nice and thoughtful of you.
3I've done this for the past 2 years with my new neighbors! They're crazy about rice pudding and prefer it over cake or pie, so when ever they come over I make rice pudding and they've even requested it for birthdays and holidays!!!
4No one in my family likes cake, so each birthday I buy 3 pints of Graeters Ice Cream (best ice cream in the whole wide world only in Ohio) because that's how many fit on our birthday cake plate, stick some candles in them and everyone is happy.
5So, I grew up eating white rice with sugar and butter. Not as dessert, but as a side dish. Yes, I was in a Southernish state, but am I the only one out there who did this?
6Happy Birthday Party's Dad:)
7This is a spanish recipe called Arroz Con Leche
8i know my own dad would like that.
9I like it, not a huge cake fan anyway. I get cakes because I like the snazzy decorating.
10Mmm, rice pudding sounds much tastier than cake to me!
11This recipie is similar to my grandmother's recipie for Arroz Con Leche. Yum!
12Yum, rice pudding. My dad always asks for blueberry pie for his birthday dessert.
13I love rice pudding. Good idea - think I'll make it this weekend.
