Crockpot Pork Roast Dinner

1 pound small red potatoes, cut in half
16 oz. pkg. baby cut carrots
3 pounds boneless pork loin roast, trimmed of fat
1/4 cup Dijon mustard (or mustard of your choice)
1/2 tsp. dried tarragon leaves
1/2 tsp. dried thyme leaves
1/2 tsp. salt
1/4 tsp. pepper
1 onion, chopped
2 cloves garlic, minced
1 1/2 cups beef broth
Makes 6 servings.
- Place potatoes and baby carrots around bottom edge of 4-6 quart crockpot.
- In small bowl, combine mustard, rosemary, thyme, salt and pepper and spread over pork roast.
- Place roast in crockpot and sprinkle with chopped onion.
- Pour beef broth over all.
- Cover crockpot and cook on low for 8-9 hours until pork is thoroughly cooked and vegetables are tender.

This look simple to make and yummy!! I'd serve it with applesauce. I don't know why, but pork roast is one of those things that must have applesauce to go with it.

2I have a friend who swears by her crock pot and cooks a ton in it. She does the roasts but also chili and soups and such. Since I live alone, it's just not practicle as you have to make large quantities in these.

5I'm a firm believer in the crock pot. I use mine once a week. Although I usually cook a pot roast, I do sometimes cook a pork roast. With a pot roast, I add carrots, potatoes, and onions, as well as some type of gravy/juice mix, and of course, salt & pepper. I put it on before I go to work, and when I return, it's done! Yummy!
6sgdish, I do the same thing. I love my crockpot, and use it alot during the cooler months. I've always done the traditional beef pot roast, but I'm going to do this pork one this week. I'm planning on taking pics, since I haven't posted one on here yet...I guess we'll see how it turns out!
7does anyone have any issues leaving it on all day when they are at work? I know it's like starting the washer when you leave but it still gives me the heebes
8I'm w/ you, lwillmarryunick...I am always hesitant leaving anything on in the house as I leave in the morning. But, as a crockpot pro, they're designed so they won't errupt in flames and burn your house down. If you set your crock on low, and leave for 7-8 hrs, you'll still have a house and a great meal.
9yum. I have no problem keeping the crock pot on throughout the day. It won't burn the food and it especially won't when the setting is on low. The crock pot is one of the best inventions.
