Last week, you came up with so many inspiring recipes that we decided to challenge you yet again. So here's the scenario: you are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/spouse/child/friend, but the ingredients you have on hand are limited.
You have red onion, honey, and French bread. Using these products along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?
To see what I would whip up, read more
- I would start by making a simple honey mustard vinaigrette with finely minced red onion, mustard, honey, lemon juice, and olive oil.
- I would use this vinaigrette to flavor a can of tuna.
- Next, I would cut the bread into large pieces and toast on both sides. Once toasted, I would rub with garlic.
- I would smear the tuna mixture onto the toast, and shred on some Parmesan cheese.
- Then, I would stick the whole thing under the broiler until the cheese is melted and bubbly.
- To plate, I would make a sandwich and call it a tuna melt!

Very resourceful!
1I would make a Honey Chicken Panini. You make a simple marinade of honey, vegetable oil, soy sauce, salt and pepper and marinate the chicken breasts. Then, after grilling the chicken (or cooking it on your broiler) place onto sliced French bread pieces and top with lettuce, tomato, red onion, and a slice of part-skim mozzarella cheese. Make into sandwiches and either toast in panini maker or on the stovetop. Yum!
2yum! your tuna melt sounds yummy!
3Turkey sub w/ Onion Relish (honey included in relish), arugula, heirloom tomatos and olives... delish!
4I'd probably add in a little tomato, some seasonings, and make a kind of salsa bruschetta. Then I'd put the mixture on top of the bread slices, add a little cheese, and broil until melted. Yum!
5I was thinking like you, ALSW...I'd probably make a bruschetta.
6that sounds sooooooo good. i wish i could come up with stuff like that.
7Ditto sammyof2!!!
8same as ALSW...i was thinking bruschetta as well....
9I'd have to go with reservations....I hate onions and am allergic to honey so I wouldn't fair well in this little challenge!!
10Honey chicken panini! Sounds delicous.
11I'd make a marinade of minced garlic, soy sauce, honey and mustard, with a dash of chicken broth, then I'd marinade a London Broil in that while I slice up the onion. I'd broil the London Broil in the marinade, saute the onion, heat the bread and make Steak sandwiches with smothered onions.
12I'd eat what all of you made.
13I'd use the honey to help make my onions all caramely and delicious then de-glaze with white wine and chicken broth, then add a little bit of arrow root to thicken it up into a sauce/ dip/ spread thing to put on nice buttery toast. yum!
14i would take the french bread, toast it and blend it in a food processor with some parlsley and garlic. season it with salt and pepper. take some chicken, coat it in flour, egg, and the bread crumbs and i'd fry those up. after cooked, i'd drizzle a bit of honey on the chicken and serve it alongside chopped onions with chopped boiled eggs and mayo and...um..whalllah?
15Like MonaMayI I'd caramelize the onions with a little bit of honey. I'd deglaze with a little apple juice, then let the onions cool and layer them on the french bread with a smear of butter, sliced apples (granny smith preferably) and thick slices of cheddar cheese.
16Carmelized balsamic onions on little toasted french bread rounds and green tea with honey and lemon.
