You know the drill by now, but just in case you don't, here's your predicament: You are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/spouse/child/friend, but the ingredients you have on hand are limited.
You have butternut squash, heavy cream, and fresh sage. Using these ingredients, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

- I would start by peeling and dicing the butternut squash. Next, I would mix it with olive oil, salt, pepper, and a teeny bit of balsamic vinegar. I would toss this in the oven at 350°F and roast until the squash is tender and soft.
- Next I would finely chop a few cloves of garlic and an onion. Then I would add these and some butter to a large saute pan heating over medium heat. I would sauté until tender and add a cup of arborio rice.
- After the rice is toasted I would add the roasted squash and chicken broth.
- I would cook, stirring for about 18 minutes to make a risotto. Near the end, I would add the heavy cream and fresh chopped sage plus lots of black pepper.
- I would raid my cheese drawer and add whatever leftover cheese I had on hand, preferably goat, blue, or Parmesan.
- Finally, I would plate in a wide, shallow bowl and enjoy with a glass of wine!

i'd make Pasta in a sage sauce w/ Butternut squash chunks and salad
Cut and peel the squash into small chunks...steam for 20 min or until soft...
while squash was steaming i'd boil some water throw in some penne...chop the sage....then start a large saute pan w/ heavy cream, salt, pepper and a lil nutmeg and some parmesean cheese....let the sauce reduce and then throw in the pasta and squash chunks last minute to absorb the sauce...
serve alongside a tricolor salad (endive/raddichio/arugula) w/ a honey pepper vinaigrette
1Sounds like a Quickfire Challenge waiting to happen! lol. Hang on though, let me think about it....oh wait, Top Chefs think on their feet with this predicament. But I'm not on Top Chef, so give me a sec....
2I would make butternut squash soup
3Since I usually have stuff on hand to make pasta (semolina, flour and uh, water), I'd make ravioli and fill it with the squash that I'd roasted, mixed with a bit of cream, ricotta if I had it, honey or maple syrup, and a little cinnamon and nutmeg. Fill ravioli using a tray or by hand (use more cream or a bit of egg to seal, crimping edges with a fork), putting a bit of filling in the middle and sealing all the way around. Chop sage and make simple sauce of butter, a bit of honey or syrup and sage (can add cream). Sauteed apples or pears are also nice.

20Soup is too obvious. I'd whip up a souffle. Let's see, some beaten egg whites, butternut squash, sage, nutmeg, cinnamon, roquefort. Then fold in some beaten whipped cream. Mm
21Like susanec I'd make a squash ravioli (filling: roasted or steamed squash, s&p, egg, splash of cream, and maybe a little cream cheese) and serve it in a sage brown butter sauce. You could even, if you cared enough, stretch some sage in the pasta dough as you roll it so that the ravioli would be verigated (it's always a hit with food civilians).
Or.... alternatively you could make a baked custard with pureed squash, cream, sugar, eggs, and pumpkin pie spice (or any spice combination to your liking). Bake it in individual ramekins in a bain marie and serve it warm and giggely in the middle. The people will go crazy.
22i'd make me and the bf's one of our all time faves, butternut squash gnocchi with brown butter and sage. i don't think we'd need the cream, maybe a good sprinkle of parmesan in the end.

23jmt, try the ravioli with apples or pears sometime (omit s & p and add a little extra spice if you make them from scratch or keep the sauce a little lighter with brown sugar or something if you use a packaged pasta like Puttney, which is very good). I've even done it for brunch in a pinch, just watch that you don't add too much cream because it can be cloying but the fall flavors are nice. Add a sprinkle of toasted nuts if you have them on hand.
24I would add cream cheese & nake a cracker spread with a bit of salt & black peeper
25I would add salt peppper, minced onion & garlic and would place this a sauce over braosted chicken and mashed potatoes.
26A nice bisque might be the obvious choice, but I'd have to go with it because (a) the weather is just now starting to cool off enough to make it sound to die for, and (b) I LOVE the stuff. I'd have it with some yummy hearty bread and a glass of Sauvignon blanc (it's still a liiiittle warm outside).
