On nights when I want a restaurant-quality meal without the fuss of going out or the hassle of standing in front of the stove, I turn to my oven. The oven is an excellent tool that can be used to make hearty, homey meals without a lot of hard work. For tonight's meal, chunked sausages, peppers, onions, and potatoes are all tossed together in a pan and left in the oven for 30 minutes. You can come home from work, pop it in the oven, hop in the shower, and enjoy in front of the TV. Paired with a glass of red wine and a green salad, get this perfect Friday night meal and read more

I love sausage and potatoes and this looks like a great recipe!
1Wow, I think I'm going to make this tonight.
Any ideas for substitutions or additions?
2ooo meat and potatoes! my favorites!
3I was really torn what to do for dinner tonight when the boyfriend comes over, I needed something simple and you just saved the day!
4This sounds good. My hubby is a Brit, so he loves anything with bangers. I would add a little bit of balsamic vinegar and oregano or rosemary to the oil before roasting.
5not a fan of red or yellow peppers (green only for me!
), any ideas on a good
substitute?
6krazykarot: why don't you just substitute green peppers?
7Hmmm, I wonder if I could do chicken or turkey sausage with this instead??
I hate Italian sausages, but the meal looks yummy otherwise.
8emalove i was thinking the same thing....i think turkey sausages would be a good substitute
9It's so simple! Yum.
10I made this last night, and it was wonderful. It has to be one of the easiest dinners I've made in a long time. Even my kids likes it.
11I love the fresh turkey italian sausage links, you get a similar taste with less fat and plus you can remove the casing on them too if you want!
12A good meal in no time at all, thanks!
13Wow that sounds good, and so easy!!
14Yum, this sounds good. I love easy recipes like this. I just did a roast for dinner tonight with this great marinade that I found and tried out.
* 1/2 cup Dijon or Creole mustard or other spicy brown mustard (I didn't have a full half of cup so I just used about 1/4 cup)
* 2 tablespoons red wine (and then I used more like a cup of red wine)
* 3 large cloves garlic, minced
* 1/2 teaspoon dried leaf tarragon ( I used fresh because it is what I had on hand)
* 1/2 teaspoon coarsely ground black pepper
I then added carrots, celery, onions, a tomato, and about a cup of water to the pot with the roast and marinade in it and put it in the oven on 325 for a few hours. I'm living in London and my oven is a cirotherm electric so I can't give you exact temp and time I cooked this for, any standard Roast recipe should be able to give you time and temp.
Can't wait to try out this Italian sausage one now!!
15Mmmm this would be perfect with turkey sausage. can't take red meat as well as I used too
