There was an interesting discussion over at the Kitchen Goddess group regarding the substitution of applesauce for oil. Lucky for us, FitSugar heard about it and gave us the lowdown.
Now you might be asking yourself, could this really taste good? The answer is yes. Take your best cookie recipe and give it a try. I'll be honest, it won't taste as fantastic as the original, but it'll be healthier and in my book that means I don't have to feel so guilty.

Applesauce Cookies
From Cookie Recipes 1011-1/2 cups flour
1/2 cup brown sugar (packed)
1/2 tsp cloves
1/2 tsp cinnamon
2 eggs
1/2 tsp baking soda
1-1/2 tsp baking powder
1/4 tsp salt
1/2 cup raisins
1/4 cup applesauceBeat eggs until thick. Add sugar. Continue beating until well mixed. Add flour that has been sifted with soda, salt, spices, and baking powder. Mix well. Add raisins and applesauce. Stir until well blended. Drop a tablespoon on a Teflon or treated cookie sheet [or one that has a piece of parchment paper on it]. Bake at 375F until done. Approximately 10 minutes. You may frost with frosting or just sprinkle with powdered sugar, they are even tasty plain.

1but I DO like the idea behind applesauce... perhaps its best to limit it to coffee cakes and such?
2I think this sounds like a great idea. I definitely enjoy cookies more if I don't have to feel guilty about eating them.
3its fantabulous!! it made my favourite list the moment i saw it. i've learnt that the appearance o the cookies dont matter tt much after all.
4in cakes, you honestly cannot tell the difference! my bf's sister made a cake with applesauce and everyone was eating it, talking about how fattening it was and whatnot. and she was like, "well, i made it with applesauce instead of oil, so it's not that bad for you." and everyone could NOT tell! there is a way to do it correctly, some ratio to use, but i can't remember. usually if you get a box of cake mix, there will be a "low fat" option with applesauce.
5my vegan friends always use applesause instead of butter. it's ok, but i think things end up being a little chewy.
6those cookies look terrible, i have baked with applesauce before and it definatly tastes delicious, you just have to know what else to add to it (maybe more baking soda or something to help the rise?) anyhow it definatly works nicely and if you use sugar free then it's very few calories.
