I originally thought I'd make a classic Thanksgiving pie for this week's baking project. However, as you may know, pie crust tends to thwart me. So instead of struggling about, I started thinking about ways to make a pie without making a pie. Eventually, I landed upon the idea of a pecan pie cookie and after a bit of googling, I found a recipe that sounded just right. The result — a thumb-print cookie with a caramelized-pecan filling — was definitely reminiscent of pecan pie, only a lot easier to put together. Pecan Pie Cookies
From Land O' Lakes
For Cookies:
1 cup firmly packed brown sugar
3/4 cup butter, softened
1 egg
1 tsp. vanilla
2 cups all-purpose flour
1 tsp. baking powder
For Filling:
1 cup chopped pecans
1/2 cup firmly packed brown sugar
1/4 cup heavy whipping cream
1 teaspoon vanilla
- Heat oven to 350°F.
- Combine all cookie ingredients except flour and baking powder in large bowl.
- Beat at medium speed until creamy. Reduce speed to low; add flour and baking powder. Beat until well mixed.
- Shape dough into 1-1/4-inch balls.
- Place 2 inches apart onto ungreased cookie sheets.
- Make indentation in each cookie with thumb; rotate thumb to hollow out slightly.
- Combine all filling ingredients in small bowl; fill each cookie with 1 rounded tsp. filling.
- Bake for 8 to 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets.

9oh one thing I forgot to mention, i thought the filling could be a bit gooier. If i make them again I would maybe add some syrup. Play around, bake a few and then alter the filling as you see fit!

14Does anyone know how many cookies this makes? I have an awesome caramel/pecan recipe and I think these brown sugar cookies look yummy, but I need to coordinate the filling to cookie ratio, or I'll just use the awesome idea for pecan pie cookies with a butter cookie recipe I have.
15This made a little under 3 dozen cookies. However, even though the folks here at the Sugar HQ loved them — some even claimed best yet — I thought the cookie was too dry. 22michichan - i'm sure they'd be fine with walnuts, however pecans are naturally sweeter, so you may want to up the sugar content in the mixture. Just taste the mixture before baking, if you'd it eat like that, then it's probably fine!

Made these today, and they were yummy... However, I added a dash of cinnamon to the filling (I'm from Texas, so I like my pecan pie with a dash of cinnamon in it).
Also, I added chocolate chips to part of the filling (filling left for a dozen or so cookies), and they were AMAZING... Though, you have to be a chocolate pecan pie fan for that...
