Here's the scenario: you are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/spouse/child/friend, but the ingredients you have on hand are limited.
You have leftover turkey breast from Sunday's dinner, a bag full of dried cranberries, and a couple stalks of fresh celery. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

- I would start by finely chopping the celery. Next I would chop a little bit of apple and red onion — two ingredients that happen to be sitting in my fridge.
- I would then chunk the leftover turkey breast.
- Next I would mix the turkey with the chopped vegetables, the dried cranberry, a few tablespoons of mayonnaise, salt, and pepper.
- I would spread this mixture between two slices of cut, white sandwich bread. Next I would grate extra sharp cheddar cheese on top of the turkey salad.
- I would heat my panini grill and then cook the sandwich in the panini maker until the bread is toasted and the cheese has melted.
- Finally, I would slice it into triangles, call it a turkey melt, and serve with a dill pickle and cold beer. This sounds so good, I may actually have to make it!

2Fry up some onions in butter. Add the celery, cranberries, figs, and a red pepper. Add some olive oil, cumin, and nutmeg to it and call it a chutney.
Pour it thick over the turkey and broil for 10 minutes with a wedge of brie on it.
That's exactly what I was thinking! Making a turkey-cranberry salad sandwich.
So to be different, I would make a turkey-cranberry salad:
Cut up the turkey into bite-sized pieces.
Dice the celery.
Toss all into a salad bowl with lettuce, tomato, cucumbers, and cranberries.
Mix with your favorite dressing.

3I like Yum's idea, but I would keep it on the cold sandwhich side.
Pull the turkey into smaller pieces. Add some mayonnaise, almonds, apple slices and salt and pepper and stir in the chopped celery and cranberries.
Turkey salad on toast!!
4I would make a nice no fuss salad.
Chop the turkey into cubes and the celery into bite size pieces and add it to a nice bed of mesclun mix with the cranberries and chopped caramelized walnuts.
I prefer no dressing, but you can toss the salad with the dressing of your choice and enjoy!!
5Since i am not a big cranberry or celery person i would probably just cut up the turkey and mix it with mayo, salt and pepper and make a sandwich.
6blegh, celery!!! i'd make a turkey salad with some mayo and cranberries.
7cut up and season any leftover dinner rolls, baguettes, etc. to make rustic croutons. mix the cubed turkey, diced celery, and handful of dried cranberries. splash some champagne/raspberry vinaigrette for a wonderful bread salad.
8I would also make turkey soup using the celery (chopped) and other veggies in my fridge (carrots, zukes, onions) and throw in some pasta.
The stock could be made from the leftover carcass - if it's still around - or just throw in a couple of cans of chicken stock.
Save the cranberries for a snack.

2 Eggs; hard-boiled , chopped
2/3 cup Celery (2 stalks), finely chopped
2/3 cup Mayonnaise , or as required
1/2 medium Red onion , finely chopped
2 teaspoons Dijon mustard
1/3 cup Pecans , toasted and chopped
Salt and pepper to taste
1/3 cup Dried cranberries (e.g., Craisins) , chopped
Insructions for Holiday Turkey Salad
1. Toast pecans lightly in a toaster oven (until fragrant). Let cool.
2. In a medium bowl, combine turkey, celery, onion, pecans, cranberries and eggs.
3. In a small bowl combine mayonnaise, dijon mustard, salt and pepper. Fold dressing into turkey mixture.
4. Cover and refrigerate 1 hour.

11I'd take the homemade chicken stock out of my freezer, some egg noodles, carrots, celery, and turkey and make soup. Season it up a little, and it's done. It's hard to go wrong with it.

15Turkey/celery/herb salad with a little mayo. Alas, I am out of bread but could always whip up some flour tortillas ... I'd either ditch the cranberries or toss them into muffin mix for dessert (I am particular about sweets in my savories.)
