Spicy Sausage and Pepper Stew
From Kraft Foods
3/4 lb. (12 oz.) reduced fat hot Italian sausage, cut into 1/2-inch-thick slices
1 medium green pepper, chopped (about 1 cup)
1 stalk celery, sliced
2 Tbsp. flour
1 can (14 oz.) reduced sodium beef broth
2 cans (14-1/2 oz. each) no-salt-added diced tomatoes, undrained
2 cans (15-1/2 oz. each) kidney beans, drained, rinsed
45 unsalted tops saltine crackers, optional for serving
- Cook sausage, pepper and celery in large saucepan on medium-high heat 8 to 10 minutes or until sausage is no longer pink, stirring frequently.
- Add flour; cook and stir 1 minute. Stir in broth, tomatoes with their liquid and beans. Bring to boil; reduce heat to low.
- Cover; simmer 20 minutes, stirring occasionally.
Serve hot with crackers, if desired.

3This looks great, though I'd probably cook some onions and garlic in a little olive oil before browning the sausage, make sure to drain off some of the excess fat (sausage is notorious for it), then add chopped baby carrots and maybe some chopped new potatoes to it to round it out.

6I made this tonight for dinner and it was awesome! I took DeviousMuse's advice and added some sauteed onion and garlic (about a half of an onion and about 5 large cloves of garlic). I also added some chopped baby carrots, some potatoes I quickly roasted and some extra celery. It was a hit! My husband loved it (and he was quite disappointed when I originally told him what we were having as he'd never had a stew he liked before!). I topped it with some parmesan cheese and I served it with some cheesy garlic bread. Great dinner for a cold night! Thanks Yum!
