
Quite simply put frico is crispy cheese. In Italy — where it originates — it was traditionally made with montasio cheese, but now any fairly fatty cheese will do. The technique involves baking, broiling, or frying finely grated cheese until it is crisp like a cracker. Fricos are a delicious accompaniment to salads and can even be shaped into a cup like the one pictured at left.
