Here's the scenario: you are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/spouse/child/friend, but the ingredients you have on hand are limited.
You have fresh crab meat, sliced sourdough, and green onions. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

- I would start by chopping the green onions. I would grate some Parmesan cheese and also chop some celery and garlic.
- I would mix all of this with the crab meat, a little bit of mayonnaise, a squeeze of lemon, and salt and pepper to taste.
- I would toast a slice of the bread under a broiler.
- I would top the bread with the crab salad mixture. I would bake it in the oven until the whole things is warm, melty, and toasty. I would call it an open faced crab melt and serve it with chilled bubbly.

I always have eggs on hand and a little cheese. So I would make an omelet with the crab, onion, some cheese and whatever other veggies I had in my fridge. A red pepper or some tomato would add nice color. Then I would toast the bread to have as a side dish.
1Instead of making a crab salad sandwich (it seems too obvious), I'd make a twist on a Panzanella, a bread salad. Green onions, red pepper, celery (I always have peppers and celery on hand), a nice blush vinegrette, and cubes of the sourdough bread. Tossed together and let to sit for a few minutes. YUM.

5You'll need a 1 tablespoon butter and 1 tablespoon flour, 1/2 cup chopped onion and 1/4 cup chopped celery, salt, cayenne and cajun spices, parsley, 1 1/4 cup milk and 1 cup white cheddar in addition to 1 pound crab, green onions and 1/2 cup bread crumbs made with the bread.
Mix the butter and flour together and toast in a skillet for 3-4 minutes then add the chopped celery, onion, salt and cayenne to the skillet and cook until everything is soft.
Add the milk and stir everything together for 3-4 minutes, until slightly thickened. Add the crab, parsley and chopped green onions and cook for 1 minute longer.
Pour it all into a 9 inch pie plate. Mix the bread crumbs and cajun seasoning together and sprinkle over the top. Sprinkle the cheese over the breadcrumbs.
Bake for 20 minutes at 400 degrees.
Remove from oven and let stand a couple of minutes before serving.
I literally started drooling at my desk when I read this post. That sounds so fabulous. Crab is my absolute favorite!

12I must concur with those who have said crabcakes. Easy, yummy, and makes you seem like a kitchen whiz kid. I know that my bf would be thrilled to come home to this and would never suspect that I had a limited pantry.
13I make a great crab dip with some spices, cream cheese, sour cream, sherry, crab, and I would just throw in the onions for a little something extra. Then use the bread to eat it with. Yum!

21Ooh! I have a great recipe for Crab Rangoons. I think it would come out similar if you roll out the bread to make a little wonton, and fry them up. Crab, cream cheese, a pinch of sugar, and the green onion!

The first idea that popped in my head was making the exact same thing as you. Crab crostinis (?). But in the real world, I'd chuck the bread and the green onions and just eat the crab by itself. I LOVE crab!!! Real crab. Not crab with a "K" cuz that's not real. Dungeness is the best! I love going to crab feeds!

28Lets mix a little bit of garlic, green onions, the crab and some cream cheese and put it on the french bread. We could put it under the broiler for a couple of minutes and its ready to go.
