Stilton:
An English blue cheese made from whole cow's milk. The milk ripens for four to six months, allowing mold to grow. It is a cheese with a pale yellow-white color and blue-green veins. It is creamy and rich in texture and its flavor sharpens with age. It has a mellow flavor with a pungent blue-cheese bite. Stilton can only be made in the British counties of Nottinghamshire, Derbyshire, and Leicestershire to a specified recipe.

I can't bring myself to eat moldy cheese. I know I'm missing out but it's a mental thing...
1I don't like blue cheese very much...one of the only cheeses that I don't love!
2Reminds me of Christmas. We always have this over the holidays at my mom's.
3Stilton is a fabulous cheese. You shouldn't reject it as "blue cheese" because it has a wonderful taste and isn't like other blue cheeses (at least not to my taste).

8they make a stilton with mango and ginger mixed in... SO GOOD! tastes a bit like cheesecake...
9I adore stilton! Unfortunately many of our local groceries only carry the kind with fruit mixed in. I'm not saying that that's always bad, but most of the time I just want to get hit with the full force of the stinky cheese.
