One of the reasons I love making meatloaf is for the scrumptious leftovers. A meatloaf sandwich with all the fillings is just as tasty as the original meatloaf! For extra flavor, jazz up store bought mayonnaise with chopped basil. Although the recipe doesn't call for it, I would definitely add some shaved Parmesan to this sandwich. It's delicious served cold for lunch and divine when warmed up for dinner. To get the recipe please read more.

3I ♥ meatloaf sandwich!
4Looks good.
5Yumm meatloaf...
6That picture isn't exactly appetizing
But at work, we have an awesome meatloaf sandwich (the meatloaf has a bit of curry powder which makes it even better) with bacon, cheddar and roasted tomatoes. It's deliciousss on a crusty fresh roll.
7doesn't look good to me
8I think this looks good! But. A) I don't like shredded lettuce in a sandwich (I know, I'm crazy), and b) the recipe calls for 8 slices of meatloaf for 4 sandwiches, but obviously only needs 4.
This almost makes me want to make a huge meatloaf for the leftovers - damn my husband and his need to "lose five pounds" and his wanting to eat healthy this month.
