Chilaquiles are a lovely alternative to tacos and enchiladas. Made with strips of tortillas and a cheesy sauce, they are like lasagna and are deliciously warm and chunky. Black Bean and Chicken Chilaquiles
From Cooking Light magazine
Cooking spray
1 cup thinly sliced onion
5 garlic cloves, minced
2 cups shredded cooked chicken breast
1 (15-ounce) can black beans, rinsed and drained
1 cup fat-free, less-sodium chicken broth
1 (7 3/4-ounce) can salsa de chile fresco (such as El Pato)
15 (6-inch) corn tortillas, cut into 1-inch strips
1 cup shredded queso blanco (about 4 ounces)
- Preheat oven to 450°.
- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
- Add onion; sauté 5 minutes or until lightly browned.
- Add garlic; sauté 1 minute.
- Add chicken; cook 30 seconds. Transfer mixture to a medium bowl; stir in beans.
- Add broth and salsa to pan; bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally. Set aside.
- Place half of tortilla strips in bottom of an 11 x 7-inch baking dish coated with cooking spray. Layer half of chicken mixture over tortillas; top with remaining tortillas and chicken mixture.
- Pour broth mixture evenly over chicken mixture. Sprinkle with cheese.
- Bake at 450° for 10 minutes or until tortillas are lightly browned and cheese is melted.

3This is random but there is an episode of Gilmore Girls where they serve Chilaquiles at Luke's diner as a lunch special. It was Ceaser's idea and they are a hit. So he keeps yelling "Chilaquiles!" over and over in the scene. I wondered what they were when I saw it on reruns a few weeks ago. I'm going to have to give this a try.

17I grew up eating these at least twice a week and I still eat them but not as often. They are fab in my tummy.
18I made these tonight, they were tasty but I would recommend a couple changes-- I would double or even triple the amount of sauce as they were very dry. However, the sauce is spicy so that will add a bit more heat. Also I would serve with sides of guacamole and sour cream. Otherwise, delish!
19I made these last night and agree that they were quite dry. The sauce was spicy so I thought next time of adding some mild enchilada sauce to the baking dish prior to adding the tortillas. Also, I only used 9 tortillas - 15 would have just been too much! I served with guacamole and diced tomatoes.
20My boyfriend and I made this for dinner last night. It was easy. While the sauce was cooking, I tried a nibble and my goodness... I like hot stuff but that was crazy hot! Taking the advice of two other comments above, I added a can of tomato sauce and the whole can of broth instead of a cup. It wasn't runny or dry, it was just right. This is a nice heavy comfort food type dish. I had some in my lunch today and it was even better than last night.
21Oh yeah, I served this with reduced fat sour cream on the side and had thrown some salsa in the sauce as well.
22I agree with KAWilliams, some enchilada sauce would be perfect for adding some moisture without the heat!
