Well, it's time to quit waiting and start drinking. Open That Bottle Night — a celebration in which wine lovers all over the world uncork a cherished bottle and enjoy the contents — is Saturday, Feb. 23. Created in 2000 by two wine writers from the Wall Street Journal —Dorothy J. Gaiter and John Brecher — Open That Bottle Night gives wine drinkers a reason to finally drink that coveted bottle. The writers argue:
These dear bottles have a special way of retrieving warm and often-forgotten memories, but you have to pop the cork to release them. That's why we invented Open That Bottle Night. So very many of us have that special bottle — from a departed loved one, from a visit to a winery, from a vacation — that we're always going to open for just the right moment, but, of course, that moment never comes.

1What a great idea! I have a bottle of Icewine that I got in Toronto 3 years ago that's just been sitting there staring at me every time I walk into the kitchen. I know it's gonna be fantastic, but I just can't bring myself to open it. What am I gonna do when it's gone

8What a great idea! I definitely have those bottle of wines that I can't bring myself to open on any occasion. And I like the timing - February is such a blah month (and that includes Valentine's Day!).
9I have a special bottle I bought in Canada in like 2002 but I still don't think this day (2-23) would prompt me to open it!
Still waiting for a special occasion. I did have a bottle of white I held onto for a couple
years but then was told white doesn't ferment as well so I ended up opening that one awhile back.
10Wine doesn't last too long in our house - it's rare that we have any sitting around longer than a week or two!! We do have one special bottle, but we won't be opening it until June 18, 2025. It was my wedding gift from my husband, and he did a great deal of research to select a great wine that will age well for 20 years so that we can drink it on our 20th wedding anniversary. So no, nothing in particular to drink on Open That Bottle Day, but we do have a special bottle
11I only have one precious bottle of wine that I just got in November- I went on a wine tour and one of the stops was Madonna's dads winery and I got the Pinot Grigio with her picture on it. I can't say that I will be drinking it anytime soon!
