At the Fancy Foods Show, I found myself drawn to paper-thin slices of dark, purple-hued cured meat. I quickly learned that the ultratender, sweet meat was something called bresaola, also known as beef prosciutto. Bresaola is an air-cured, spiced, and salted cut of beef that is aged for several months. The cut comes from the hind leg of the animal and is best served thinly sliced as an antipasto. While the beef cut (usually the eye of round) is very tender, unlike prosciutto, it's extremely lean and has no visible fat. Valtellina, the Alpine valley in Lombardy where bresaola was first conceived, is a protected geographical indication; those made in the same style outside Valtellina are often labeled "viande séchee" instead. The most popular way to serve bresaola is sliced on its own as an appetizer. It is often drizzled with olive oil or vinegar in the style of beef carpaccio, or served on top of salads and pizza. This year for Valentine's Day, I wanted to make something special for my nonexistent boyfriend, but I couldn't decide between luxurious red velvet cake or rich fudgey brownies. While I was pondering this dilemma, I suddenly remembered an old recipe for brownie heart cupcakes. Inspired by Martha, I decided to combine the best of both worlds and make red velvet cupcakes with pink cream cheese frosting and brownie heart garnish. The finals competition, which was emceed by Top Chef Masters host Kelly Choi, took place at the Culinary Institute of America in New York. The participating chefs had two and a half hours on Friday and three hours on Saturday to prepare 12 servings each of salmon and lamb dishes along with extensive sides for the judges.
Kent's menu included Scottish salmon with leeks, Alaskan king crab, cucumbers and Meyer lemon, and Spring lamb with piquillo peppers, among other things. The open-to-the-public competition was the culmination of a two-day event that included chef round tables and demonstrations. Kent and his commis, Tom Allan, will spend the next year training to compete in the Bocuse D'Or that takes place in France in January of 2011.
