Are Vegetables the New Meat?

The idea that vegetables should be the star of a meal over perennially-championed animal protein has been a long time coming. It's something we've suspected would happen ever since we learned about non-vegetarian chef Jeremy Fox's vegetable-driven cuisine at Ubuntu.

Today, in "Vegetables Are the New Meat," New York Magazine discusses the vegesplosion, even going so far as to coin the term "vegivore" to describe non-vegetarian eaters who possess "fervent vegetable love rather than ardent meat hate."

I'm the perfect case study: a diner who enjoys eating meat, but can't stop extolling the vegetable. After all, there's nothing more stunning than a savory tomato tart or marinated baby vegetables. Are you a vegivore, too?

I definitely think vegetables may be the new meat for a large portion of the users of this site, but not for the overall population.

Absolutely! Veggies have so much flavor and the possibilities are endless, not to mention just healthier!

Amen to this! This country as a whole would be so much better off if we ate MOSTLY vegetables and used meat more like a condiment. There are so many ways to prepare veggies to make them delectable; there's no reason to fill up on meat when it's so much healthier to eat veggies.

Vegetables are so diverse in taste and color, I really never get bored of them. There's always some new recipe or combo I want to try. There's only so much you can do to meat. Chicken is chicken, beef is beef, and fish/seafood is fishy. But veggies can take on new flavors that meat can't.

I grow most of the veggies we eat but they will never replace my filet mignon or grilled lobster ever!

Love it! More recently I have been picking veggy options over meat options simply because I love the flavor more, it can be so much more diverse. Lately I have been eating black bean and corn veggy burgers and having portobella mushrooms. Don't get me wrong, a good steak or burger is yummy, but I have had 100 of them.
