How gorgeous is the hand-carved apple rose in Gabriela Une Vie Saine's apple-walnut cake?

I made this raw apple-walnut-currant cake for a recent culinary school class, and while it was delicious, I was most proud of the apple rose I made as a decoration. It's the first time I've made one that has stayed together and looked pretty!
