The meat: North and South Carolina may disagree on some aspects of their barbecue, but they agree on one thing: it's always pork! It's usually pulled, and often cooked in a pit.
The sauce: Traditional Carolina barbecue sauce is a thin, vinegar-based sauce, but depending on the region, you may find a mustard- or tomato-based sauce as well.
The slaw: Carolina slaw is a vinegar slaw, with no mayo or sour cream. Occasionally barbecue sauce may be added to the slaw for a, you guessed it, BBQ slaw.
