Food & Wine Best New Chefs Show Aspen Their Top Dishes

The Best New Chefs Dinner [1] is a highlight at the annual Aspen Food & Wine Classic, but for the festival's 30th anniversary celebration, Food & Wine switched things up, showcasing this year's award winners at a Grand Tasting booth throughout the weekend. Take a look at what they offered — and what we devoured.

Best New Chefs Corner

Best New Chef Dish: Kale Ash-Coated Wagyu Short Rib

Catbird Seat chefs Erik Anderson and Josh Habiger prepared a wagyu short rib coated in kale ash and topped with a dollop of cold ramp vichyssoise. It was one of the best things we consumed over the course of the weekend.

Best New Chef Dish: Fluke Americaine

Fluke Americaine from Rich Torrisi and Mario Carbone of New York's much-discussed Torrisi Italian Specialties.

Best New Chef Dish: Corn With Manchego

Sautéed corn, jalapeño, shaved manchego, and lime from ABC Kitchen's Dan Kluger. "It's a great Summer dish," he told us.

Best New Chef Corey Lee

Sadly, chef Corey Lee of Benu in San Francisco ran out of his smoked eggplant, salmon roe, puffed buckwheat, and perilla dish, but he was all smiles anyway.

Best New Chef Dish: Coco-Piggy Taco

Seattle-based Madison Park Conservatory chef Cormac Mahoney served us coco-piggy tacos. "I'm having a blast!" he told us. His tacos, made with coconut braised pork, cucumber nuoc cham, and fried shoestring potatoes, were messy to eat but worth the extra napkins.

Best New Chef Dish: Grilled Octopus Salad

Jenn Louis of Lincoln in Portland, OR, served octopus that had been slow-cooked, then grilled, alongside fennel, arugula oil-cured olives, and pimentón.

Best New Chef Dish: Sea Scallop With Caviar

Danny Grant of Ria in Chicago highlighted superfresh sea scallops and caviar with just a few minimalist touches, like hakurei turnips, fumé blanc wine, and a garnish of thinly sliced nori.

Best New Chef Dish: Lamb Belly With Clam Vinaigrette

Amish lamb belly with clam vinaigrette, tarbais beans, and dried corn from Karen Nicolas of Equinox in Washington DC.

Venison Tartare

Blaine Wetzel's venison, right off the bone, nestled in a bed of spruce.

Best New Chef Dish: Venison Tartare With Spruce

This venison tartare with spruce combination, served by Blaine Wetzel of Willows Inn, was bright and hearty at the same time.

Best New Chef Dish: Short Rib Rendang

Chef Bryant Ng's short rib and tongue rendang with peanut sambal, fried anchovies, and coconut rice exemplified the type of Singaporean cooking he offers at his Los Angeles restaurant.

Bonus: Best New Pastry Chef Chris Ford

Best New Pastry Chef Chris Ford at the Godiva tent with his creation, pistachio rocky road rice pudding.
