When it comes to buffalo, are you willing to pay the price? As ranchers struggle to keep up demand, bison meat is closing in on record-high prices. Buffalo's extremely lean texture and smooth flavor have become sought after in recent years, but that hasn't come with growing pains in the niche business, such as difficulty meeting demand and food safety snafus. Still, the industry maintains that, so far, consumers have been willing to pay a prettier penny. Do you dole out more to buy buffalo?

i do plan on eating meat again, but only once in a blue moon, and when I do you can bet your bottom dollar I'll be chewing on some bison. Loooooooooovvvvvveeee it. I only eat it at restaurants :)

Heck ya! Bison is delish although I adore Grass-Fed Beef, Ostrich & Elk a bit more! = They may all be pretty expensive but honestly, it's a lot cheaper than the medical bills you will be paying later when you over load on grain-fed beef products that will clog your arteries and cause a whole mess of problems for you in the future.

Super delish! We first bought our from the Indians in Montana after the buffalo hunt in Yellowstone (many moons ago) and have been noshing ever since. We do buy ours when we are up north so it's not a price issue with us.

It is full-on yummy! I've been trying to settle on words to describe it, but keep coming back to "beefier" and with a very slight sweetness to it. The downside is that due to it's low fat content, it is a bit more challenging to cook properly. Very quick or slow methods dramatically reduce the risk of ending up with a hockey puck!
