Chipotle Chile
A very hot dried, smoked jalapeno. Its traditional heated flavor is used to spice up Southwestern and Mexican dishes. They are sold dried, pickled or canned in a vinegary sauce called adobo. Generally they are added to stews and sauces while the pickled variety are consumed as an appetizer.
