Chocolate Ginger Soda With Cranberry

Chocolate Syrup Ingredients
2 cups water
1 teaspoon vanilla extract
1/2 cup brown sugar
1/2 cup cocoa powder
1/8 cup Craisins (we used reduced sugar Ocean Spray Craisins)

Soda Ingredients
Ice
8 ounces ginger beer (we used Gosling's Ginger Beer) or plain soda water
1 to 2 tablespoons chocolate syrup
1 shot dark rum (we used Gosling's Black Seal Bermuda Black Rum), optional

Chocolate Syrup Instructions

  1. Add all of your wet ingredients to a small saucepan and turn on high heat. Bring to a boil then add your brown sugar. Stir until it melts (just a minute or two).
  2. Remove from heat and stir in your cocoa powder until it dissolves completely. Add in your Craisins and let steep then cool.
  3. Once your chocolate syrup has cooled, strain or remove Craisins and pour remaining liquid into a cream pitcher. Place in the refrigerator until cold

Soda Instructions

  1. Fill a chilled glass with little ice and pour in ginger beer. You could also use plain soda water if you don't like ginger beer. Add chocolate syrup (you can add more or less if you'd like, we prefer a little more). Add one shot of dark rum, optional. Lightly stir then serve ice cold
