Actually, Anon 1, the author is correct. You left out the second u in your spelling. It is commonly spelled as both "bourguignonne" and "bourguignon."

Really? I mean - seriously? What's the difference? Despite two different languages.

It is a lovely dish; too bad you didn't get the name right. It's 'Boeuf Bourgignon', or Burgundy Beef.
