Confit
Usually referring to duck or goose, confit is a method of slowly cooking and preserving salted meat in its own fat. Prounounced kohn-fee, it is sometimes referred to vegetarian items that are slowly braised and preserved in olive oil and spices, or in sugar. It means "conserve" in French and is one of the oldest ways to preserve food.
