Cooking in Costa Rica

While I thoroughly enjoyed the cuisine of Costa Rica [1], one of my favorite parts of the trip was cooking! The condo that we stayed in had an amazing kitchen, and since cooking has always relaxed me, I made dinner practically every night. And breakfast every morning. I snapped a bunch of photos so I could share the experience with you. Here you'll get a taste of what it's like to cook in Costa Rica.

Chorizo and English Muffins

My dad discovered a delicious brand of English Muffins. They're called Bays [2], and you can find them in the refrigerator section of the supermarket. Crisp and soft, they quickly became a Costa Rican breakfast staple.

Mermelada de Piña

Whenever my sister travels to Latin America, she tries the exotic fruit jam. She selected this pineapple marmalade that is basically the best jam ever. It's sweet, chunky, and insanely scrumptious.

Toast with pineapple marmalade, a fried egg, and a banana. Yum!

Making Tamales

A local friend surprised me with homemade tamales! He said to cook them in boiling water for 5 to 10 minutes until they were heated, so I followed his instructions.

Wrapped in banana leaves, these delectable tamales were filled with pork.

Ceviche and Fried Plantains

Following the recommendation of the fishmonger, I used tilapia to make fresh ceviche. I served it with twice-fried plantains and ripe avocado.

Refried Beans, Eggs, and Pineapple

What do you do with leftover beans? You mash them and make refried beans to serve with eggs at breakfast.

Makeshift Rolling Pin

One night I used puff pastry to make a bacon tart. Since the kitchen didn't have a rolling pin, I got creative with a wine bottle.

Panettone Bread Pudding

The local mercado sold an excellent panettone. I used it to make Ina Garten's bread pudding [3].

Queso Fundido

Stay tuned, I'm developing a queso fundido with spicy chorizo recipe. Its birthplace was Costa Rica.
