Cupcake of the Week: Eggnog Cupcakes

This week's cupcake comes from our pal Nicole over at Baking Bites. Her vegan eggnog cupcakes look absolutely delicious and fool even the most whole-hearted carnivore. They're beautifully moist and tender. Did I mention that they're also spiked with rum? Definitely give these delights a try, and if you do, be sure to let us know what you think.

I actually prefer soy eggnog. Its not as rich as the regular milk version. Silk makes it.

I just whipped up a batch of these using "real" eggnog. They turned out perfectly, though I think the eggnog flavour could have been a little stronger. Good recipe!

Eggnog cupcake sound delicious, I would use the real mccoy instead of the soy.

Hey Yum, do you think if you made these cupcakes with regular eggnog instead of the soy version it would change the consistency/you would need to tweak the recipe? My boyfriend is allergic to soy, but these sound really delicious.

I have had Vita Soy Holly Nog many times already this winter, it is a lot tastier than you think it will be. I think I will try out this recipe. They sound yummy
