Cupcake of the Week: Pumpkin Chiffon Mousse With Gingersnaps

This week's cupcake come from TeamSugar member smfaulkner. She's worked Pumpkin Chiffon Mousse into a cupcake with a gingersnap crust and bourbon whipped cream. Not only are they adorable, but I bet they're downright delectable too!

I made these over the weekend. wow it took a while, but the end result was worth the wait. i substituted frangelico for the bourbon, as i didn't have bourbon on hand (and i'm not a huge fan of it besides), and it seemed to have worked fancifully! tastes like a light pumpkin pie, but better. yum!

I made these and they were amazingly light and tasty. If you don't like pumpkin you will like these because the pumpkin is very faint.

I need to try these! Though I was trying to think of a kid-friendly bourbon substitute for the mousse, 1/4 is a lot to substitute, wasn't sure if 1T of vanilla would offset that much liquid or not...any suggestions?
