Happy Hour: Coconut Lime Daiquiri
A daiquiri doesn't have to be a sugary, blended concoction. The classic version of the cocktail is made simply and served up, much like a Papa Doblé daiquiri, and uses just three ingredients: light rum, lime juice, and simple syrup.
I recently made daiquiris to use up an overload of lime juice, but then I realized I had no light rum, only the coconut variety. Would this be good or gross?
I shook one up and discovered that the lime and coconut combination is deliciously tropical and refreshing. I've made the drink several times since; it's like a cocktail you'd get at a tiki bar but far less trouble. Get the recipe when you read more. Coconut Lime Daiquiri

2 cups crushed ice, plus extra for chilling glass
2 ounces coconut rum
1-ounce freshly squeezed lime juice, strained of pulp
