Christmas dinner traditions in the US are all over the map — there really is no such thing as "traditional"! From tamales to pastas to gravlax and stollen, every family does Christmas a little differently. On the YumSugar team, some of us will be enjoying pepper-crusted beef tenderloin and homemade mac and cheese, while others are digging into honey baked ham and buttery roasted potatoes. What are you eating for Christmas dinner?

Christmas Eve was spent with friends and I made a salt and pepper encrusted prime rib with mashed potatoes, horseradish cream, yorkshire pudding, creamed spinach and fresh gingerbread. Christmas Day was more family oriented so I made brunch - pumpkin chocolate chip pancake souffles with fresh whipped cream, bacon and roasted fruit compote.

We had traditional Norwegian xmas dinner: Pork ribs, medisterkaker, sauerkraut, potatoes, xmas sausage and riskrem (rice porridge mixed with cream) for dessert. With an almond hidden in the riskrem for one lucky person to find and claim the marzipan pig! :D

On Christmas Eve, I fixed honey-and-maple syrup glazed ham, green bean casserole, and sweet potato rolls, with gingerbread trifle for dessert. Tonight my husband took me out to dinner at our favorite Chinese restaurant (yes, really! LOL). :)

On Christmas Eve we had Tamales, rice, beans, Menudo, clam dip, artichoke/shrimp dip, and avocado/feta cheese/tomato dip. Tonight we are having honey glazed ham, lemon pepper green beans with almonds, and roasted potatoes.

The "dinner" with family is always at about 2 or 3 and isn't usually anything I like or can eat. So at my real dinner time, probably something light with a salad. I'm sure I'll have eaten plenty of cookies and will be craving some veggies.
