Blood Sausage: Love It or Hate It?

One of the many trends at this year's Food & Wine Classic was blood sausage, which I spotted everywhere with its inky, dark color, especially at Cochon 555's Grand Cochon. We love the sausage's distinct mellow, earthy-sweet taste, which it takes on when the meat is mixed in with blood. Although it's popular in German, French, English, and Spanish cultures, blood sausage still hasn't fully caught on in the States because of its gory association. How do you feel about it?

I've had it before growing up....Taiwanese background. I neither like it nor hate it. It's something I couldn't have on a consistent basis...and to me...It just "is" *shrugs*

I've only had blood sausage in Argentina, where they call it morcilla. It was one of only a few things I have not been able to stomach.

I grew up in a place called Newfoundland (province in Canada) that is an island of british/english/irish descent. This is a very popular and traditional item there. I grew up to the smell of my dad cooking it, but never liked it. I remember black blood pudding (or sausage I guess as it is called here) and also there is a white one. I remember having to eat the white more than the red (if it was served for dinner, thats what you got!)

I've never tried it but I hate it based on smell and appearance haha... I worked in a Scottish pub when I was younger and it was part of the breakfast special. Serving it at 11am with a terrible hangover was enough to make me stay far away from it forever!

i may be an avowed omnivore, but unless it's in a great stew, i can't stand this stuff! it's flavour is like marmite - totally overwhelming. i like it in soups with grains like barley or with pulses, but it takes a seasoned chef to bring out the best in it

i had blood sausage while on a wedding weekend for our friends. i had it when i was a kid and have hated it for years, but this sausage was beyond tasty. i wouldn't eat it every day, but i can handle it now. must be getting old. :)
