Yes, for almost any Emeril recipe I come upon, it says to use his "Essence" which he gives you the recipe for as well!
Isn't "Essence" one of Emeril's spice mixes? Smart thinking to bottle it!

I just buy preblended ones at the store. I don't usually have time to make my own.
I like both buying spice rubs and making blends of my own. There's no denying the convenience of buying them, but when you make your own with just-ground spices, you're guaranteed fresh flavors.
I have. But spices, to me, are the same if you buy them in the store.
