Do You Order Cocktails That Are Made With Raw Eggs?

The New York City Health Department recently told the Pegu Club that using raw eggs in cocktails is a health violation.

However, bartenders know that in some classic cocktails (like a Pisco sour), a raw egg is necessary to make the drink frothy.

Like most daring drinkers, I assume that the alcohol will kill any salmonella and often order beverages made with raw eggs. How about you?

These bars should be using pasteurized eggs if they are serving them raw! I make drinks like this at home using Davidson's Safest Choice, look for the circle P! They are still in the shell and taste better than regular eggs. Plus it is an all-natural water bath process.

Well I too love raw cookie dough and when I was a kid I used to lick the beaters when my mom made a cake so I probably would try a drink with raw eggs if it was tasty! Oh yeah I love meringue on pies too, that counts doesn't it?

it grosses me out. can't eat runny scrambled eggs, or fried eggs. won't eat omelets because usually its considered best to serve slightly soft in the center....yum i too can swear i smell/taste the egg white so no raw eggs in anything for me...slimy

Yes, I definitely do — although I have to say that I swear I can also taste/smell the egg white, and it has a slightly off smell.

@xxstardust, I was thinking the same thing about raw cookie dough and drinks with raw eggs, the only way to go.

I don't, but not because of the bacteria; I just don't care for cocktails made with egg whites.

i make a killer homemade eggnog annually at christmas time and never had anyone complain of getting ill because of its consumption. i'm cool with it.

It's very uncommon to get salmonella from eggs - less than 1/20,000 eggs are contaminated. It's far more likely to occur from eating undercooked chicken. I'm willing to eat raw cookie dough - might as well have drinks that way too!

can't they use pasteurized egg whites? i think that's what they use for an orange julius...

i try not to think about it. if it says it on the menu then i'm turned off. but if i can pretend its not in it i'll order it. my mother installed the fear of raw eggs in my from an early age, so its hard to get over!

pisco sours are DELICIOUS, as is legit eggnog at the holidays
