I use olive oil, canola oil or peanut oil. It depends on what I'm making as to which one is used. I have yet to use grapeseed oil but it is on my to try list.

i wouldn't say i'm stocked, but i've got vegetable oil, olive oil, virgin coconut oil, toasted sesame seed oil, and walnut oil. i use the first for higher heat cooking or baking. olive for
everyday sauteeing and most savory dishes. i use coconut oil as much as possible because it's so healthy, but only where heat is low. the last two are for flavoring, particularly salad
dressings.
I don't have a lot, but besides a variety of Olive Oils I love Avocado Oil (http://casaoliver.com/Apalta-avocado-oil-from-chilean-gourmet.asp). SO yummy in salads
and for sauteeing veggies. I also like making my own infused Olive Oils with various herbs/spices.
I use peanut for higher temps and baking, pure olive oil for saute and extra-virgin cold-pressed olive oil for salads. I keep a little bottle of toasted sesame for Asian dishes, and that's
about it.
Canola oil doesn't offer me any taste with it's grease, and it often smells rancid to me so I never buy it or use it.
I use grapeseed, refined coconut and virgin coconut oil. Was using evoo, but saw that grapeseed oil raised the good cholesterol levels and that's what my family needs, so I switched.
And try the virgin coconut oil in the bedroom. You'll never use synthetic stuff again. Really, really awesome stuff.
