Are You Interested in Learning How to Break Down Meat?

While I'm not sure if I could slaughter my own animals, I'm ready to learn how to break down a carcass. I've taken out the backbone of chickens and turkeys, and after watching a fascinating demonstration on lamb butchery at a lunch hosted by the American Lamb Board, I want to learn how to slice a larger animal into its primal cuts. How about you? Have you ever sliced a lamb or pig into pieces?

I'm good with poultry but I'd be interested to learn more. Funny...now that I think about it, the majority of my friends don't know the first thing about cutting up a whole chicken.

Yes, absolutely! I wish a had a personal guide to show me how a few more times so I can remember!

.....you mean bacon doesn't come sliced....it has to be cut off....well count me in!

My grandfather was a butcher and he showed me everything, also we have he old butchers manual.

Definitely - I already know the basics i.e. for poultry and small game (rabbit etc) but i'd love to learn the techniques for other meats and it would be useful seeing as where i come from, an animal is often slaughtered on special occasions. If you are interested, The River Cottage Meat Book is a MUST read plus it features great recipes and is reasonably priced
