I can't resist the minute blueberries start popping up at the market to make homemade blueberry muffins. I have tried many recipes, but I finally found the perfect one on Fine Cooking. The recipe combines both applesauce and buttermilk for an incredibly moist muffin! Of course, they are divine right out of the oven. But I made a couple dozen muffins and wrapped them up individually to freeze. They are just as good defrosted and reheated in my toaster oven for a couple minutes!

4-1/2 oz. (1 cup) unbleached all-purpose flour
4 oz. (1 cup) whole-wheat flour
2 tsp. baking powder
1/2 tsp. table salt
1/4 tsp. baking soda
2 large eggs
3/4 cup granulated sugar
1/4 cup canola oil
1 cup natural unsweetened applesauce
1-1/2 tsp. finely grated lemon zest
1 tsp. pure vanilla extract
3/4 cup low-fat buttermilk
1-1/2 cups fresh blueberries
