View Transcript »If you want to really wow your sweetheart, you've gotta try engagement chicken. This recipe first came out about when a Glamour magazine fashion assistant made this for her boyfriend, who proposed soon afterwards. Since then hundreds of significant others have put the recipe to the test including Howard Stern's wife Beth, and today we're here to bring the recipe to life. So this is what you're going to need to make this recipe. One whole chicken, half a cup freshly squeezed lemon juice, three whole lemons, one tablespoon kosher or coarse Salt half a teaspoon freshly gound pepper and some fresh herbs for the garnish, you want to start by sticking the oven rack in the upper third of the oven and pre-heating the oven to 400¬∫. I'm gonna wash the chicken inside and out with cold water. You don't want it too warm, otherwise you're gonna cook the chicken! Now that the chicken's all nice and clean, I'm gonna lay the cavity face down inside a colander. And I'm gonna let it dry for two minutes. So now I'm going to pat it to dry with paper towels. You want to pat it to dry so it can really absorb the lemon juice. Flip it over. Get in there. Now you want to transfer the chicken to a roasting pan that's fitted with a rack. Make sure you put it breast side down. Then you want to pour the lemon juice all over the chicken, both inside and out. I like to rub the chicken to get it all over the entire bird. Use a heavy hand with the salt, and a generous sprinkling of pepper. Be sure to get the salt on the inside of the bird too. Take two lemons and we're going to prick them three different places, three times each. Then stick them inside the cavity of the chicken. Next up, the chicken is going in the oven. The minute the chicken goes into the oven, turn the temperature down to 350 degrees. After fifteen minutes we are going to take the chicken out of the oven so we can flip it over breast side up. Then Just stick the chicken back in the oven for about an hour or until a meat thermometer reads 180 degrees. Oh my goodness, I can smell it and it smells incredible. But I'm not going to cut it open just yet. In fact, I'm going to give it about 10 minutes to allow the juices to redistribute. Now we're going to take the thermometer out and transfer the whole thing to a beautiful serving platter. I'm gonna garnish the chicken with some root vegetables all around the dish. And some fresh herbs. I like to garnish it with a few lemon slices as well. Here comes the most important part, the "marry me" juice. It comes from the bottom of the pan, but I like to use it to top off the chicken. Give the recipe a try and pass along to a friend.
