Shhh, don't tell anyone: the recipe uses a boxed yellow cake mix, meaning these mini cakes will be ready to bake in minutes. Ingredients
1 18.5-ounce box yellow cake mix (plus the ingredients called for in the package directions)
1/2 teaspoon pumpkin pie spice
1 15-ounce can pumpkin puree
2 8-ounce bars cream cheese, at room temperature
2 cups confectioners’ sugar
24 pieces candy corn
Directions
- Heat oven to 350° F. Line two 12-cup muffin tins with paper liners.
- Prepare the cake mix as directed but with the following change: Add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions.
- Divide the batter among the prepared muffin tins and bake until a toothpick inserted into the center of a cupcake comes out clean, 18 to 22 minutes. Let cool.
- Meanwhile, using an electric mixer, beat the cream cheese and sugar until creamy. Spread on the cupcakes and top each with a piece of candy corn.
Makes 24 cupcakes.

Yum! I wish I was throwing a Halloween party this year, because you have so many awesome ideas! I bet these would be super cute with a mellowcreme (mellow cream?)on top.

3These sound delicious and so easy! I might just have to make them and bring to work on Friday. I would love if you did a collection of easy recipes that start with a boxed cake mix. Here is my go-to recipe:
1 box cake mix (any flavor)
2 eggs
1/2 cup vegetable oil
Mix until combined (batter will be very thick) and drop big spoonfuls onto a cookie sheet. Bake for 10 minutes at 350 degrees. They are the most delicious cookies ever! Sometimes I ice them with frosting to make them even more yummy.
4I forgot to mention that sometimes I also add a 1/2 bag of chocolate, cinnamon or peanut butter chips (depending on the flavor of the cake mix) They're the bomb!
