Here's another one: when I've ordered Chinese take-out, I usually end up not eating much of the fried rice. The next day, I'll stir-fry the fried rice up with whatever's left over from my entree. That always ends up tasty!

I love leftovers because they're a great alternative to eating out or bringing a sandwich (ick). I vote for gumbo as something that always tastes better the next day!

i read the story a few days ago about how we should consider leftovers as an economic relief but i still can't bring myself to eat them - or enjoy them. lucky for me i don't eat that much anyway, and my fiance does - so he can eat the leftovers and we can save a bit of money that way.
