Gin Rickey Recipe

Every day, sometime after 5 p.m., my father indulges in a Tanqueray and tonic. He always garnishes it with a fresh lime wedge and has practiced this afternoon ritual for as long as I can remember. When I found this recipe for a gin rickey recently on Gourmet, it totally reminded me of my dad! Thus, for Father's Day, I plan on making gin rickeys. It's a simple cocktail that combines gin with fresh lime juice and seltzer water. Since my Pops is partial to tonic, I'll make his with diet Schweppes. Gin Rickeys

Ingredients

3 oz (6 tablespoons) gin
2 tablespoons fresh lime juice
6 to 8 oz chilled club soda or seltzer

Directions

1. Fill a cocktail shaker halfway with cracked ice, then add gin and lime juice. Shake 5 seconds, then strain into 2 tall (8- to 10-ounce) glasses filled with ice cubes.
2. Top off drinks with club soda, then squeeze a lime wedge over each and drop into glass.

Makes 2 drinks.
