While I love trying new recipes, most of the time I end up using them as launching pads. We've been eating a lot of turkey burgers in the Yum household and I was up for a change. So, knowing that there was a pound of ground turkey in the fridge, I suggested Sloppy Joes. We had most of the fixings, and just ran with it. Half way through we realized that in addition to not having any bell peppers, chiles, or green onions — which the original recipe called for — we also were out of bread or buns.
So what did we do? We put the sloppy mixture on to really hefty handmade corn tortillas and sprinkled it with cilantro! It was a fantastic way to use up the last of our tortillas and it ended up being really delicious. The corn flavor paired nicely with the sloppy joe seasonings, and the cilantro gave it a nice finish. In the end I was glad we decided to run with it despite not having all the ingredients.

1 1/2 pounds ground turkey
1 large green bell pepper, chopped
4 large garlic cloves, chopped
3 tablespoons chili powder
1 1/4 cups ale or beer
3/4 cup bottled chili sauce or ketchup
1 4-ounce can diced green chilies
2 tablespoons Worcestershire sauce
1 cup finely chopped green onions
2 cups shredded romaine lettuce or packaged garden salad mix
3 tablespoons olive oil
6 sourdough rolls, split, toasted
