Fresh-caught sardines are a delicacy native to the region where they're served grilled, seasoned only with chunky salt crystals. Recently, I attended a barbecue where a Spaniard taught me how to make sardines. Read on for the procedure.

My wife's Sicilian Grandmother deep fries these, sometimes with breading. Kosher or sea salt, and sometimes a squeeze of lemon if they're too fishy.

I would love to try these but the majority of my friends would be freaked out to eat these...esp with the heads still on the fishies. Wussies! I'm lacking a few, good, Spanish friends...that like to cook such delightful things. Drat!
