Have You Ever Worked With Marzipan?

Over the weekend I made a princess cake for a friend's birthday. A princess cake is a layer cake with lots of complex components, including a marzipan dome. While I enjoy eating marzipan, this was the first time I've ever worked with it in my own kitchen, and it was harder than I expected! Have you ever used marzipan? I'd love to hear your tips for rolling it out.

Here in Norway Odense sells already rolled out marzipan that is just the right size and shape for a princess cake.

Yes, but only to make decorative objects to go on top of a cake or cupcake. I've never made a Princess Cake but they are very traditional here in Finland as well. You can get them at the grocery store.

I love marzipan but have either used the pre-rolled or made it into shapes.

I've never used it, but it sounds like an interesting project. I've always wondered if it was similar to fondant.

When rolling out the marzipan, liberally coat underneath it, and the rolling pin with icing sugar, as you would do with flour when rolling out things with regular dough. It helps quite a bit. Also rolling it out on something you can lift it up and turn it around to place on the cake easily helps - parchment paper, waxed paper... The easiest way to do it is to buy pre-rolled marzipan, though. ;) Unlike what it says in the original post - a Princess Cake is a Swedish cake, not a Norwegian one. It was first created in a cookbook made by teacher of the Swedish Princesses Astrid, Margaretha and Märtha. In Norway, I've only seen it in the food section at IKEA. The Swedish baking association have dedicated a week (or was it a day) to the cake.

I bought it thinking it was a key ingredient for making macarons (did NOT read recipe completely, haha) and it's been sitting in the pantry because I have no idea how to use it!

I usually roll it out on parchment paper dusted liberally with a mixture of icing sugar and extra cornstarch. I find it rolls better chilled but that may just be me. :) My wedding cake was a traditional Swedish cake with white layers, whipped cream/custard filling, jam filling, covered with a light cream layer and then covered with marzapan. It was decorated with whipped cream roses and trim. We had it served as our dinner dessert. Yum!
