Separate the Seeds from the Pulp

Wash the seeds in a strainer, separating them from as much of the stringy flesh as possible. For a tasty snack, roast the seeds by following the same process as you would to roast pumpkin seeds.

I just recently made butternut squash soup with a fresh squash it made a difference that you couldn't believe. The only thing that kept it from being perfect was me forgetting to put a lid on the pot and having the soup bubble up and splatter all over the kitchen. Oops.
