One of my favorite things to cook — and eat — when it's warm outside is vichyssoise soup. It's always served at the country club I grew up going to in the Summer, so it reminds me of the vacation! The potato and leek soup is also absolutely delicious. Potatoes are a cinch to wash and slice up, but leeks require more preparation. So the first time I tried to make this soup, I had to do a little research about how to use this onion/garlic cousin.
