Lamb Romesco Pizza Is Different, but Delicious

I've never met a pizza I didn't like and am always looking for new and unusual toppings, so when I received a recipe from Chef Eric Lee of Simi Winery for lamb sausage pizza, it went on the top of my must-make list. With the roasted red pepper sauce, slightly spicy sausage, and tangy feta cheese, it's a nontraditional but super flavorful pizza. Once you make the romesco, the pizza comes together quickly. Cook at high heat for maximum crispness. If you're a fan of lamb, you've got to try this pizza! Here's the recipe.

2 balls of pizza dough
Romesco sauce
12 ounces fresh lamb sausage, cooked
5 ounces grated mozzarella
2 ounces feta cheese
1 teaspoon chopped mint
1 teaspoon chopped Italian flat parsley


  1. Preheat a pizza stone placed onto the bottom rack of a 500°F oven for at least 30 minutes.
  2. Roll out the dough on a floured pizza peel to 1/4 inch thickness. Spread some of the romesco sauce onto the pizza leaving a 1/2 inch border.
  3. Top with the cooked lamb sausage and the cheeses. Slide onto the pizza stone and bake until golden brown.
  4. Top with some of the mint and parsley. Slice and serve immediately.
